10 spring roll rice paper wrappers
10 turkey breast slices
5 slices crisp, cooked bacon, broken in half
1 large avocado, sliced
handful of fresh basil leaves
Citrus Soy Dipping Sauce (recipe follows)
1 medium carrot, thinly sliced like matchsticks, 1 inch long (optional)
Fill a large bowl with warm water. Dip rice paper wrappers in water, lay on plate and let sit for 15 seconds or until rice paper is pliable. Layer your fillings on the bottom 1/3 of the wrapper. Example: 1 slice turkey breast, 1/2 slice bacon, two basil leaves, two slices avocado and 5-6 carrots sticks. Do Not Overfill!
Drizzle 1 t. of Citrus Soy Dipping Sauce over filling. Start rolling rice paper from the bottom to the top, folding in the sides and tucking in the filling firmly as you go. Serve with the Citrus Soy Dipping Sauce.
Citrus Soy Dipping Sauce
2 T. soy sauce
1 T. lemon juice
1 t. sesame oil
1 T. light brown sugar
1 t. chili garlic sauce.
Whisk together ingredients till combined. Delicious!
