Roasting Beets

Pre heat oven to 400 degrees.

Wash dirt off beets and pat dry.  Cut off root and stem.

Place on cookie sheet and cover tightly with aluminum foil.

Bake for 60 – 90 minutes, depending on thickness of beets.  Beets are done when you can easily pierce with a knife to the middle.

Cool enough to handle, then peel off the skin.

Cut into appropriate size pieces for your recipe.
