Roasting a Pumpkin

Preheat oven to 400 degrees.  Cut the whole pumpkin in half, discard seeds or reserve to toast later.  Cut pumpkin into several smaller pieces and place on a foil lined baking sheet.  Drizzle with olive oil and season with salt and pepper.  Roast in oven until tender but not falling apart, about 30 to 40 minutes.  Let cool, then peel away skin and dice.
