2 large stalks broccoli, about 1 pound, cut into florets
2 T. olive oil
1/2 t. salt
Preheat oven to 375 degrees. Place cauliflower and broccoli into a 9 x 13 baking dish, toss with olive oil and season with salt. Cover dish with aluminum foil and bake for 30 min. Remove cover, stir and cook for 15-20 minutes more until vegetables are tender and lightly browned.
Kid-friendly Hint: I wouldn’t change a thing in this recipe when you make it, just know that when the cauliflower and broccoli are lightly browned, the caramelization of the natural sugars adds a great flavor with out adding calories. My kids will eat cauliflower and broccoli steamed without butter or sauces but when I roast it they feel they are getting a special treat because of the slight sweetness.
