Penne Pasta with Grilled Chicken and Sun-dried Tomatoes

1 lb. penne pasta, cooked and drained

1 batch Easy Alfredo Sauce

5-6 sun-dried tomatoes, chopped

2 half grilled chicken breasts, shredded or thinly sliced

1 handful fresh basil, chopped

Parmigiano-Reggiano cheese, shredded

Cook pasta according to package directions.  Immediately, toss with Easy Alfredo Sauce till pasta is coated evenly.  Add sun-dried tomatoes, grilled chicken and fresh basil.  Gently stir till combined.  Serve with Parmigiano-Reggiano cheese to sprinkle on top.

Easy Alfredo Sauce

1 c. heavy cream

3 T. butter

1 c. parmigiano-reggiano or other good parmesan cheese, shredded

pinch of ground nutmeg

Salt to taste

Heat heavy cream and butter in a medium sauce pan.  Just before it comes to a boil, remove from heat and stir in parmigiano-reggiano cheese, nutmeg and salt till cheese is fully melted and incorporated.


Kid-friendly Hint:  I have also added steamed broccoli to this and sauted button mushrooms.  It’s delicious any way but the most kid-friendly version is the orginal recipe.
