Grilled Pizza with Mushrooms and Proscuitto

prepared pizza dough (can be bought in the refrigerated or freezer section of grocery store)

½ cup favorite pizza sauce

1 c. sliced mushrooms (white or cremini)

1/2 cup shredded mozzarella cheese

1/2 cup shredded  provolone cheese

2T.  grated Parmesan cheese

1-2 ounces Prosciutto thinly sliced and cut into ribbons

1 T.   chopped fresh basil

Preheat grill to med-high (about 500 degrees).  Stretch pizza dough to a 12 in round or square. Lightly oil one side of pizza dough.  Turn down grill to med and put oiled side down on hot grill.  Cook for 2-3 minutes until lightly browned on bottom (some char is fine).  Lightly oil top of pizza dough, turn down heat to med – low and flip over.

Quickly put toppings on the cooked side of the dough, starting with some pizza sauce, mushrooms, proscuitto, basil and topped with all three cheeses.  Turn down heat even lower and close the lid to warm the toppings and melt the cheese.  This side will cook for 3-4 minutes.

Every dough cooks differently, my favorite is the Trader Joe’s prepared dough that comes as a ball of dough in a bag.  It really is just like my homemade dough. My local grocery store also sells dough that way but in the freezer section.   My least favorite is the dough that comes in a can, it just cooks weird because it’s so soft.  But if your desperate I have used it so I know it can work.

Kid-friendly Hint:  Include your kids!  It is a fast dish and lots of helping hands makes it fun and easier.  We had a blast the other day and they really think it tastes better if they helped make it!
