2 T. olive oil
1 grilled chicken breast half, shredded
handful of fresh basil leaves, julienned
1/4- 1/3 c. chopped sun-dried tomatoes
2 c. shredded mozzarella cheese
Preheat grill to med-high (about 500 degrees). Stretch pizza dough to a 12 in round or square. Lightly oil one side of pizza dough. Turn down grill to med and put oiled side down on hot grill. Cook for 2-3 minutes until lightly browned on bottom (some char is fine). Lightly oil top of pizza dough, turn down heat to med – low and flip over.
Quickly put toppings on the cooked side of the dough, starting with some olive oil, sun-dried tomatoes, chicken, basil and topped with mozzarella. Turn down heat even lower and close the lid to warm the toppings and melt the cheese. This side will cook for 3-4 minutes.
If the toppings need more cooking but the dough is done (each pizza dough type cooks differently) just slide the pizza off the burners, turn up the other burners not under the pizza, close the lid and it will continue cooking without overcooking the dough.
Kid-friendly Hint: Leave out the basil or use less. You can also replace the basil with spinach which has a milder flavor but still makes the pizza taste great.
