Goat Cheese and Tomato Bruschetta

1 baguette

3-4 ripe roma tomatoes, chopped into small pieces

2 t. crushed garlic

handful of fresh basil, chopped

6 oz. goat cheese

salt and pepper

Slice baguette on the diagonal about 1/2 in thick.  Lightly brown each side on grill.  Set aside.

In a small bowl, mix together the chopped tomato, basil, crushed garlic and season with salt and pepper.

To assemble: take one slice of toasted baguette, spread a layer of goat cheese on it then spoon the tomato, basil, garlic mixture on top.  Do not assemble ahead of time as the baguette will get mushy.

Kid-friendly Hint:  Just don’t over load the baguette.  Spread the goat cheese thinly and just put a few pieces of tomato mixture on top.
