Ginger Molasses Cookies

1 c. packed brown sugar

3/4 c. canola oil

1/2 c. molasses

1 egg

3 c. all purpose flour

2 t. baking soda

2 t. ground ginger

2 t. ground cinnamon

1 t. cloves

Demara sugar for rolling.

Preheat oven to 375 degrees fahrenheit.

In a large bowl, mix together sugar, oil, molasses and egg.

In a separate bowl mix together the flour, baking soda, ground ginger, ground cinnamon and cloves.

Add dry ingredients to the sugar mixture, stir till combined.  Place cookie dough into a ziplock bag and refrigerate for two hours.

Form 1-2 oz balls, roll in demara sugar and place on cookie sheet 2 inches apart.  Bake in the preheated oven for 13-15 minutes.  You want the cracks to open up but to still be soft to the touch.

Let it cool slightly before removing to a cooling rack.
