1/2 c. diced avocado
2 oranges, peeled and sectioned (tip: use a knife to…)
1/4 c. toasted pine nuts (tip: to toast…)
1 c. cooked, shredded chicken breast
Wash and tear lettuce into bite size pieces. Toss salad in large bowl with avocado, orange sections, pine nuts and chicken breast. Drizzle Ginger-Soy Dressing over salad to taste and mix well.
1/2 c. rice vinegar
1/3 c. honey
1 T. soy sauce
1 t. ground ginger or 1 T. grated ginger root
1 T. sesame oil
1 t. salt
Whisk together or shake in a dressing bottle.
Hint: I love my dressing bottle to mix my homemade dressing in and to store in the fridge for future use.
