Apple-Pecan Harvest Salad

1 Honeycrisp or Fuji apple, cored and thinly sliced

1/2 head romaine lettuce, washed and torn into bite size pieces (can also use equivelent amount of spring mix)

1 head red leaf lettuce, washed and torn into bite size pieces

1 cup glazed pecans (click link for recipe)

Dressing:

1/2 c. olive oil

1/4 c. cider vinegar

1/2 shallot minced

2 T. lemon juice

1 T. maple syrup

1/4 t. salt

1/4 t. pepper

Make dressing by adding olive oil, cider vinegar, minced shallot, lemon juice, maple syrup, salt and pepper into a dressing bottle and shake till combined.

Put apple and lettuce in a large bowl and pour about 1/4 dressing on top.  Toss and add more dressing if needed.  Then add glazed pecans and toss again.
